  • 1/4 teaspoon vanilla extract

Method
 

Cooking
  1. In a saucepan, combine the rolled oats, grated zucchini, and almond milk.
  2. Cook over medium heat, stirring occasionally, until the mixture is creamy and the oatmeal is cooked through (about 5-7 minutes).
  3. Stir in cinnamon, nutmeg, sweetener, and vanilla extract.
  4. Remove from heat and let it sit for a minute to thicken.
  5. Serve warm, topped with nuts, seeds, or dried fruit if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, add a little almond milk or water and warm in the microwave or on the stovetop.
