  • 2 ripe mangoes, diced Choose ripe mangoes for the best sweetness and flavor.
  • 1 can black beans, rinsed and drained Use canned black beans for convenience.
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup corn (fresh or frozen) Fresh corn is ideal, but frozen works too.
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 2 limes, juiced
  • Salt and pepper to taste
  • Olive oil (optional)

Method
 

Preparation
  1. In a large bowl, combine the diced mango, black beans, red bell pepper, red onion, corn, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, salt, pepper, and olive oil.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be served as a side dish or a light lunch. It's also great with tortilla chips or added to tacos. For best results, eat within the first few days to maintain texture.
