Preparation
- Peel and chop the mangoes.
- In a blender, combine the mangoes, coconut milk, honey or sugar, and lime juice.
- Blend until smooth.
- Pour the mixture into popsicle molds.
- Insert sticks and freeze for at least 4-6 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds.
Notes
These popsicles are great for parties or just a sweet treat for yourself on a hot day. Store any leftovers in an airtight container or zip-top bag in the freezer for up to a month.
