  • 2 ripe mangoes, diced Use ripe mangoes for best flavor.
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced Adjust according to spice preference.
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice Juice of about 2 limes.
  • to taste salt

Method
 

Preparation
  1. In a mixing bowl, combine diced mangoes, bell pepper, red onion, jalapeño, and cilantro.
  2. Squeeze lime juice over the mixture and add salt to taste.
  3. Gently stir until all ingredients are well mixed.
Serving
  1. Serve immediately with fish tacos, shrimp tacos, or grilled chicken.

Notes

Mango salsa is best served fresh and can be used as a topping or a dip. Store leftovers in an airtight container in the refrigerator for up to 1-2 days for optimal freshness.
