Method
Cooking the Chicken
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
- Cook until golden brown and cooked through. Remove from the skillet and set aside.
Making the Sauce
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream, stirring to combine. Add in the parmesan cheese and sun-dried tomatoes. Cook until the sauce thickens.
Cooking the Gnocchi
- Meanwhile, cook the gnocchi according to package instructions. Drain and add to the sauce.
Combining Ingredients
- Slice the cooked chicken and return it to the skillet. Toss everything together to combine.
Serving
- Serve warm, garnished with fresh basil.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat on low heat, adding extra cream or broth if needed. Try adding spinach or kale for extra nutrition or spice it up with red pepper flakes.
