  • 1 lb ground chicken
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 large egg
  • 1 tbsp olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, and egg. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
  2. Transfer the meatballs to a baking sheet and bake in the preheated oven for 15-20 minutes, or until cooked through.

Notes

Serve with tzatziki or marinara sauce, pasta, or couscous. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
