  • 1 cup green lentils Rinse and cook according to package instructions.
  • 1 medium cucumber, diced
  • 2 medium tomatoes, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, pitted and sliced
Dressing
  • 1 medium lemon, juiced
  • 1/4 cup olive oil
  • 1/4 cup fresh herbs (like parsley or dill), chopped
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Rinse and cook the lentils according to package instructions until tender. Drain and let cool.
  2. In a large bowl, combine the diced cucumber, chopped tomatoes, crumbled feta, and olives.
  3. Add the cooled lentils to the bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, chopped herbs, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or chill in the fridge for a few hours to let the flavors meld.

Notes

For best results, cook lentils until just tender but still holding their shape. Variations include adding grilled chicken, shrimp, or chickpeas for added protein.
