Mediterranean Stuffed Salmon

  • 4 pieces salmon fillets Choose fresh, skinless fillets for best results.
  • 1 cup spinach, chopped Fresh spinach works best.
  • 1/2 cup feta cheese, crumbled Use good quality feta for enhanced flavor.
  • 1/2 cup sun-dried tomatoes, chopped Preferably packed in oil for better taste.
  • 2 cloves garlic, minced Garlic adds depth to the stuffing.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Olive oil, for drizzling Use extra virgin olive oil for best results.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, garlic, oregano, and basil. Season with salt and pepper.
  3. Carefully slice a pocket into each salmon fillet.
  4. Stuff the salmon pockets with the Mediterranean stuffing mixture.
  5. Place the stuffed salmon on a baking sheet lined with parchment paper.
  6. Drizzle with olive oil and season with additional salt and pepper if desired.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serving
  1. Serve warm, ideally with a side of roasted vegetables or a fresh green salad. A light lemon wedge on the side can enhance the flavors.

Notes

Make sure not to overfill the salmon pockets to avoid spilling during baking. Using fresh herbs is recommended for a more aromatic flavor. Adjust filling ingredients as desired for personal preference.
