  • 4 cups Watermelon, cubed Use a ripe, sweet watermelon for the best flavor.
  • 1 cup Feta cheese, crumbled Feel free to adjust the amount to your preference.
  • 1 cup Cucumber, diced
  • 1/2 cup Red onion, chopped Finely chopped for best flavor.
  • 1/4 cup Mint leaves, chopped Add extra for garnish if desired.
Dressing
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Start by cutting the watermelon into bite-sized cubes, making sure to remove the rind completely.
  2. Dice the cucumber into small pieces.
  3. Finely chop the red onion.
  4. In a large bowl, combine the watermelon, cucumber, red onion, crumbled feta, and chopped mint.
Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  2. Pour the dressing over the salad ingredients.
  3. Gently toss everything to combine.
Serving
  1. Serve the salad immediately or chill it for 30 minutes for a cooler dish.

Notes

This salad is best served chilled. A sprinkle of extra mint or a drizzle of olive oil on top can enhance the presentation. Great alongside grilled meats or sandwiches.
