  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 2 cups corn (fresh or canned) Frozen corn can be used if thawed and drained.
  • 1 cup cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 tablespoon Tajin seasoning Can be substituted with chili powder, lime zest, and salt.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup tortilla chips, crushed (for topping)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, corn, cream cheese, sour cream, cheddar cheese, cotija cheese, lime juice, Tajin seasoning, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Pour the mixture into a greased baking dish and spread evenly.
  4. Top with crushed tortilla chips.
Baking
  1. Bake for 25-30 minutes, until bubbly and golden on top.
Serving
  1. Serve warm, right out of the oven.

Notes

Pair with a side salad or fresh guacamole. Garnish with lime wedges or fresh cilantro for added flavor. For making it vegetarian, replace chicken with black beans or chickpeas.
