  • 1 cup rolled oats
  • 1/2 cup almond butter (or peanut butter) You can substitute with any nut butter.
  • 1/2 cup protein powder (chocolate or vanilla flavor) Feel free to experiment with flavors.
  • 1/3 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped fresh mint or 1 tsp peppermint extract Increase amount for a stronger mint flavor.
  • 1 pinch salt

Method
 

Preparation
  1. In a large bowl, combine the rolled oats, protein powder, and a pinch of salt.
  2. Add the almond butter and honey (or maple syrup), and mix until well combined; the mixture will be sticky.
  3. Stir in the chopped mint and mini chocolate chips until evenly combined.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Once chilled, scoop out the mixture and roll it into small balls, about 1 inch in diameter.
  6. Store in an airtight container in the fridge for up to a week and enjoy!

Notes

These protein balls can be enjoyed straight from the fridge or left at room temperature to soften slightly. They are ideal for meal prep or as a healthy snack.
