Ingredients
  

Main Ingredients
  • 1 (3-4 lb) chuck roast Should be well marbled for the best tenderness.
  • 1 packet ranch seasoning
  • 1 jar (16 oz) pepperoncini peppers Including juice for added flavor.
  • 1/2 cup unsalted butter Cut into slices.
  • to taste Salt and pepper For seasoning.
  • Mashed potatoes, rice, or sandwich rolls For serving.

Method
 

Preparation
  1. Season the chuck roast with salt and pepper.
  2. Place the roast in the Instant Pot.
  3. Sprinkle the ranch seasoning over the roast.
  4. Pour the entire jar of pepperoncini peppers over the top, including the juice.
  5. Cut the butter into slices and place on top of the roast.
Cooking
  1. Close the lid of the Instant Pot and set it to high pressure for 60 minutes.
  2. Allow natural pressure release for 15 minutes, then quick release any remaining pressure.
  3. Remove the roast, shred it with forks, and serve with mashed potatoes, rice, or on sandwich rolls.

Notes

For richer flavor, sear the roast in a skillet before cooking. Feel free to add vegetables like carrots or potatoes. For more heat, add sliced jalapeƱos with the pepperoncini.
