Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1 cup chopped dates
  • 1 cup walnuts or pecans, chopped
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the sugars, oil, eggs, vanilla, and milk until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped dates and nuts.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Enhances flavor with butter or cream cheese. Store in an airtight container for up to three days, or refrigerate for a week.
