Ingredients
  

For the Cookie Base
  • 2 cups granulated sugar
  • ½ cup salted butter
  • 3 tablespoons unsweetened cocoa powder
  • cup milk (whole or 2%)
For the Texture
  • 3 cups quick-cooking oats
  • ½ cup shredded coconut (unsweetened)

Method
 

Preparation
  1. Line two baking sheets with parchment paper or wax paper.
  2. Prepare a small cookie scoop or tablespoon for portioning.
Cooking
  1. In a medium saucepan, combine granulated sugar, butter, cocoa powder, and milk.
  2. Stir over medium heat until the butter melts and the mixture is smooth.
  3. Bring the mixture to a gentle boil, aiming for just below the soft-ball stage (around 230°F/110°C).
  4. Do not overcook; boiling for 1-2 minutes should be sufficient.
Mixing
  1. Remove the saucepan from heat and stir in the quick-cooking oats and shredded coconut until fully combined.
  2. Work quickly as the mixture starts to set as it cools.
Forming Cookies
  1. Using a small cookie scoop or tablespoon, drop mounds of the mixture onto the prepared baking sheets.
Setting
  1. Allow the cookies to cool and set at room temperature for 20-30 minutes or refrigerate for 10-15 minutes.

Notes

Store cookies in an airtight container for up to 5 days at room temperature, or up to 1 week in the fridge for a firmer texture. They also freeze well for up to 2 months.
