Preparation
- Line two baking sheets with parchment paper or wax paper.
- Prepare a small cookie scoop or tablespoon for portioning.
Cooking
- In a medium saucepan, combine granulated sugar, butter, cocoa powder, and milk.
- Stir over medium heat until the butter melts and the mixture is smooth.
- Bring the mixture to a gentle boil, aiming for just below the soft-ball stage (around 230°F/110°C).
- Do not overcook; boiling for 1-2 minutes should be sufficient.
Mixing
- Remove the saucepan from heat and stir in the quick-cooking oats and shredded coconut until fully combined.
- Work quickly as the mixture starts to set as it cools.
Forming Cookies
- Using a small cookie scoop or tablespoon, drop mounds of the mixture onto the prepared baking sheets.
Setting
- Allow the cookies to cool and set at room temperature for 20-30 minutes or refrigerate for 10-15 minutes.
Notes
Store cookies in an airtight container for up to 5 days at room temperature, or up to 1 week in the fridge for a firmer texture. They also freeze well for up to 2 months.
