Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup mixed nuts (walnuts, almonds, cashews) Chopped into small pieces.
  • 1/2 cup dried fruit (raisins, cranberries, apricots)
  • A pinch of salt
Wet Ingredients
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/4 cup nut butter (peanut butter, almond butter) Feel free to experiment with different nut butters.
  • 1/2 tsp vanilla extract

Method
 

Preparation
  1. In a large bowl, combine the rolled oats, mixed nuts, and dried fruit.
  2. In a separate bowl, mix the honey (or maple syrup), nut butter, vanilla extract, and salt until smooth.
  3. Pour the wet mixture over the dry ingredients and stir until everything is well combined.
  4. Line an 8x8 inch baking dish with parchment paper.
  5. Press the mixture firmly into the dish in an even layer.
  6. Refrigerate for at least 1-2 hours until firm.
Serving
  1. Once set, cut into bars and enjoy!

Notes

These bars are perfect as an on-the-go snack, a quick breakfast, or a satisfying treat after a meal. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. For extra flavor, toast the nuts before adding them, or add seeds for added nutrition.
