  • 1 cup Pecans (finely chopped)
  • 1 cup Graham Cracker Crumbs (or crushed cookies)
  • 1 cup Powdered Sugar (or granulated sugar)
  • 1/2 cup Cocoa Powder (or carob powder)
  • 1/2 cup Unsalted Butter (or vegan butter)
  • 1/2 cup Maple Syrup (or agave nectar/honey)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt (optional)
  • 1 cup Semi-Sweet Chocolate Chips (or dark/white chocolate)
  • 1/2 cup Chopped Pecans (for garnish)

Method
 

Preparation
  1. In a large bowl, mix together the finely chopped pecans, graham cracker crumbs, powdered sugar, and cocoa powder.
  2. In a separate bowl, combine the butter, maple syrup, vanilla extract, and salt. Melt this mixture in the microwave or on the stove until smooth.
  3. Pour the melted mixture into the dry ingredients and stir until everything is well combined.
  4. Once fully mixed, chill the mixture in the refrigerator for about 30 minutes.
  5. After chilling, scoop out small portions and roll them into balls using your hands.
  6. Dip the balls into melted chocolate and then roll them in the chopped pecans for garnish.
  7. Place the finished balls on a parchment-lined tray and let them set in the fridge for another 30 minutes.

Notes

Store the pecan pie balls in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.
