  • 1 cup raw cashews 100 g
  • 3/4 cup unsweetened shredded coconut 60 g, use fresh for better flavor
  • 1/4 tsp sea salt optional

Preparation
  1. Add all of the ingredients to a food processor.
  2. Process until the mixture turns into a thick, sticky dough that you can press between your fingers.
  3. Use your hands to roll the dough into 15 small balls.

These energy balls can be enjoyed right away or shared at gatherings. They can be served chilled or at room temperature. Storage: Store in an airtight container in the refrigerator for about a week, or freeze for up to three months.
