Preparation
  1. In a mixing bowl, combine the rolled oats, almond butter, honey, and vanilla extract.
  2. Mix well until everything is combined.
  3. If using, add mini chocolate chips or flaxseed to the mixture and stir.
  4. Use your hands to roll the mixture into small balls, about one inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes or until firm.

Notes

These energy balls can be enjoyed on their own or with fresh fruit or a smoothie. Store them in an airtight container in the refrigerator for up to one week or freeze for up to three months, separating with parchment paper if stacking.
