Ingredients
  

Cookie Base
  • 1 cup butter, softened Make sure butter is softened for easy creaming.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Add-ins
  • 3 cups rolled oats Use old-fashioned rolled oats for best texture.
  • 1 cup raisins Can substitute with chocolate chips or dried cranberries.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this to the creamed mixture.
  5. Stir in the oats and raisins.
Baking
  1. Drop by spoonfuls onto ungreased baking sheets.
  2. Bake for 10-12 minutes, or until the edges are golden brown.
  3. Allow to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze for up to three months, layered with parchment paper.
