  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted
  • 1 piece red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken, cherry tomatoes, olives, red onion, garlic, oregano, thyme, olive oil, salt, and pepper.
  3. Transfer the mixture to a large baking dish, spreading it out evenly.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and slightly golden.
  2. Remove from the oven and let it rest for a few minutes.
  3. Garnish with fresh basil before serving.

Notes
