Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, beat the eggs, then add in the cottage cheese, vegetable oil, and vanilla extract. Stir until the mixture is smooth.
- Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined; do not overmix.
- Fold in the diced peaches carefully to keep them intact.
Baking
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve with whipped cream or vanilla ice cream. Store leftovers tightly covered for up to three days at room temperature or a week in the fridge. Freezing individual slices is also an option.
