  • 2 cups fresh peaches, peeled and diced
  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, beat the eggs, then add in the cottage cheese, vegetable oil, and vanilla extract. Stir until the mixture is smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined; do not overmix.
  5. Fold in the diced peaches carefully to keep them intact.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Once done, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers tightly covered for up to three days at room temperature or a week in the fridge. Freezing individual slices is also an option.
