  • 2 cups quick oats
  • 1 cup peanut butter Use creamy for a smoother texture.
  • 1 cup jam (your choice) Feel free to swap for fruit preserves or fresh fruit.
  • 2 cups milk (or non-dairy alternative) Vegan option available with non-dairy milk.
  • 1/2 cup brown sugar Can reduce to lower sugar content.
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Can substitute with nutmeg or allspice.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the quick oats, brown sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the peanut butter, milk, and vanilla extract; stir until smooth.
  4. Pour the wet mixture into the dry mixture and mix well.
  5. Spread half of the mixture evenly in a greased baking dish.
  6. Add a layer of jam on top, then pour the remaining oatmeal mixture over it.
  7. Bake for 25-30 minutes until set and lightly browned.
  8. Allow to cool slightly before cutting into squares. Serve warm or at room temperature.

Notes

Pair with fresh fruit, yogurt, or honey for added flavor. Store leftovers in an airtight container in the refrigerator for up to five days or freeze individual portions.
