  • 1/4 cup ground flaxseed Grind your flaxseed for maximum nutrients.
  • 1/4 cup mini dark chocolate chips Optional; substitute with dried fruits or coconut flakes for variation.
  • 1 tsp vanilla extract
  • 1 pinch salt

Preparation
  1. In a medium bowl, combine the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  2. Add the rolled oats, ground flaxseed, and a pinch of salt to the wet mixture and stir until well combined.
  3. If using, fold in the mini dark chocolate chips.
  4. Chill the mixture in the refrigerator for 20 minutes to firm up.
  5. Once chilled, roll the mixture into 1-inch balls using your hands.
  6. Store the energy bites in an airtight container in the refrigerator for up to one week.

Notes

These energy bites can be enjoyed as a quick snack on their own or paired with fresh fruit. They can also be crumbled over yogurt or oatmeal for breakfast. For longer storage, freeze them in a single layer in a freezer-safe bag for up to three months.
