Preparation
- Preheat your oven to 400˚F.
- If the chicken breasts are uneven in thickness, pound them to make them ¾ to 1-inch thick for even cooking.
- Line a baking sheet with parchment paper or foil.
- Season the chicken breasts on both sides with salt and pepper.
- Arrange the chicken on the prepared baking sheet. Spread 1 tablespoon of pesto on each breast.
- Top each breast with 1 ounce of shredded mozzarella and 2 slices of tomato.
- Bake for 20 minutes, or until an instant-read thermometer shows 165˚F.
- Garnish with fresh basil leaves before serving.
Notes
Best served warm. Pair with a simple salad or roasted vegetables. Can also serve with pasta or rice.
