  • 4 pieces boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 Tbsp homemade pesto or your favorite pre-packaged pesto Use homemade for a fresher taste.
  • 4 oz shredded mozzarella cheese
  • 2 medium tomatoes, sliced
  • pieces Fresh basil for garnish

Method
 

Preparation
  1. Preheat your oven to 400˚F.
  2. If the chicken breasts are uneven in thickness, pound them to make them ¾ to 1-inch thick for even cooking.
  3. Line a baking sheet with parchment paper or foil.
  4. Season the chicken breasts on both sides with salt and pepper.
  5. Arrange the chicken on the prepared baking sheet. Spread 1 tablespoon of pesto on each breast.
  6. Top each breast with 1 ounce of shredded mozzarella and 2 slices of tomato.
  7. Bake for 20 minutes, or until an instant-read thermometer shows 165˚F.
  8. Garnish with fresh basil leaves before serving.

Notes

Best served warm. Pair with a simple salad or roasted vegetables. Can also serve with pasta or rice.
