Ingredients
  

For the Muffins
  • 3 pieces apples (divided — 2 grated, 1 cut into small dice) Use 2 apples grated and 1 diced.
  • 1 teaspoon cinnamon Plus ¼ teaspoon nutmeg optional.
  • ½ cup sugar Plus 1 tablespoon for marinading the apples — can reduce to ¼ cup for less sweetness.
  • 2 large eggs
  • cup Greek yogurt
  • cup peanut butter Using one with 100% peanuts, no added sugar or oils.
  • 1 tablespoon vanilla extract
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and line your muffin pan with muffin liners.
  2. Dice 1 apple (peel on) into small cubes. Toss with 1 teaspoon cinnamon and 1 tablespoon sugar. Set aside.
Mixing Wet Ingredients
  1. In a large bowl, whisk together 2 large eggs, ⅔ cup Greek yogurt, ⅓ cup peanut butter, ½ cup sugar, and 1 tablespoon vanilla extract.
  2. Grate in 2 apples (cored and seeded) and toss until combined.
Mixing Dry Ingredients
  1. Add 1½ cups all-purpose flour, 2 teaspoons baking powder, and 1 teaspoon baking soda. Gently fold until just combined. Do not overmix.
  2. Fold in diced, marinated apples lightly.
Baking
  1. Divide the batter evenly into the lined 12-cup muffin pan and sprinkle tops with a little cinnamon sugar (optional).
  2. Bake at 350°F (180°C) for 22–25 minutes, until a toothpick comes out mostly clean.
  3. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Make sure to mix the ingredients gently to avoid dense muffins. Use parchment paper liners for easy removal. Feel free to add nuts or raisins for extra texture and flavor.
