  • 3 ripe bananas Use very ripe bananas for the best sweetness and flavor.
  • 2 large eggs Can substitute with flax eggs for a vegan version.
  • 1 cup almond flour Can substitute with regular flour, which may change texture.
  • 1/2 cup protein powder Use your preferred flavor of protein powder.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add eggs, honey or maple syrup, and vanilla extract to the mashed bananas and mix until well combined.
  4. In a separate bowl, mix together almond flour, protein powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

You can enjoy Protein Banana Bread on its own, or spread a little nut butter on a slice for an extra boost of flavor and nutrition. It’s also delicious when served warm with a drizzle of honey or a sprinkle of cinnamon on top. Wrap tightly in plastic wrap or store in an airtight container. It can be kept at room temperature for up to three days. For longer storage, slice it and freeze with wax paper in between the slices.
