Mug Cake Base
  • 1 large egg
  • 3 tablespoons milk (coconut milk recommended)
  • 1 tablespoon maple syrup
  • 2 tablespoons chocolate protein powder
  • 2 tablespoons oat flour or gluten-free baking flour
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons chocolate chips (optional)
  • 1 pinch sea salt

Method

Preparation
  1. In a 10-12 oz microwave-safe mug, whisk together the egg, milk, and maple syrup.
  2. Add the protein powder, oat flour, cocoa powder, and sea salt. Fold until combined.
  3. Gently fold in 1 teaspoon of the chocolate chips.
Cooking
  1. Microwave on HIGH for 90 seconds.
  2. Carefully remove the mug from the microwave—it will be hot!
  3. Check the cake's texture; it should be firm and spring back when pressed.
Serving
  1. Let the mug cake cool for 1-2 minutes.
  2. Top with the remaining chocolate chips, fresh berries, or a dollop of whipped cream if desired.

Notes

Use a larger mug to avoid overflow during cooking. You can customize this mug cake by mixing in different ingredients such as nuts, dried fruits, or seeds for added texture and flavor.
