Main Ingredients
  • 1 pound Radiatori pasta Cook according to package instructions.
  • 4 ounces Prosciutto Chopped.
  • 8 ounces Burrata cheese Cut into pieces.
  • 1 cup Slow roasted tomatoes Prepared in advance.
  • 1 cup Fresh basil Chopped.
  • 1/2 cup Pesto To taste.
  • 1/2 cup Parmigiano cheese Grated.
  • 1/4 cup Pistachios Chopped; optional to toast for crunch.
  • 1/4 cup Aged balsamic vinaigrette To taste.

Method
 

Preparation
  1. Cook the radiatori pasta according to package instructions. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooled pasta, prosciutto, burrata, slow roasted tomatoes, and fresh basil.
  3. In a small bowl, mix the pesto and aged balsamic vinaigrette together.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Top with grated Parmigiano cheese and chopped pistachios. Serve chilled or at room temperature.

Notes

To store, place in an airtight container in the refrigerator. Will stay fresh for up to 3 days. Toss gently before serving if ingredients settle.
