  • 1.5 lb boneless skinless chicken breast, cut into 1-inch cubes
  • 1 lb baby potatoes, washed and halved
  • 12 oz fresh green beans
  • 2 tbsp olive oil
  • 2 oz ranch seasoning mix (2 packets) Use one packet for the veggies and one for the chicken.

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit and line a large sheet pan with parchment paper.
  2. Cut the baby potatoes in half and dice the chicken into 1-inch pieces.
  3. In a large bowl, toss the potatoes and green beans with olive oil and one packet of ranch seasoning.
  4. Spread the vegetables onto the baking sheet.
Cooking
  1. Add the diced chicken to the same bowl, toss it with the second ranch packet, and place it on the pan in the open spaces.
  2. Bake for 20 to 25 minutes, until the chicken is cooked through and the potatoes are tender.

Notes

For extra flavor, marinate the chicken in ranch dressing for an hour or more before cooking. Feel free to swap out the vegetables for whatever you have on hand, like carrots or bell peppers. If you prefer crispy chicken, broil the dish for the last few minutes of cooking.
