Main Ingredients
  • 4 large Dill pickles Choose large pickles for thicker slices.
  • 8 oz Corned beef, thinly sliced Adjust quantity based on preference.
  • 4 slices Swiss cheese, sliced Substitute with other cheese types if desired.
  • 1 cup Sauerkraut, drained You may skip or substitute with shredded lettuce.
  • 1/4 cup Russian or Thousand Island dressing Serve extra for dipping if desired.
  • 12 pieces Toothpicks For assembling the bites.

Method
 

Preparation
  1. Slice the dill pickles into thick rounds.
  2. On each pickle slice, place a small piece of corned beef, followed by a slice of Swiss cheese and a spoonful of sauerkraut.
  3. Drizzle a little Russian or Thousand Island dressing on top.
  4. Top with another slice of pickle and secure with a toothpick.
  5. Serve immediately or chill until ready to serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days.
