Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken thighs, minced garlic, mixed vegetables, olive oil, salt, pepper, and dried herbs.
  3. Toss until everything is coated evenly.
  4. Transfer the mixture to a baking dish and spread it out in a single layer.
Cooking
  1. Roast in the oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  2. Serve warm.

Notes

For extra crispy chicken skin, you can broil the dish for the last 5 minutes of cooking. Marinate the chicken thighs in olive oil, garlic, and herbs for a richer flavor.
