  • 2 fillets salmon fillets
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 whole lemon for juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) optional for garnish

Preparation
  1. Rinse the quinoa under cold water.
  2. In a pot, bring 2 cups of water (or vegetable broth) to a boil, then add the quinoa. Reduce the heat, cover, and simmer for about 15-20 minutes until fluffy.
  3. While the quinoa cooks, preheat your oven to 400°F (200°C).
Cooking
  1. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and lemon juice, and season with salt and pepper.
  2. Bake the salmon for about 12-15 minutes, or until it flakes easily with a fork.
Serving
  1. Once both the quinoa and salmon are done, serve them together and garnish with fresh herbs if you like.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat gently before serving again. Use different seasonings to change the flavor, and try toasting the quinoa for added texture.
