Sautéed Lemon Garlic Butter Shrimp Pasta

Ingredients
  

For the shrimp
  • 1.5 lbs Jumbo or large shrimp Use fresh shrimp for the best flavor.
  • 5-6 cloves garlic Adjust the garlic according to your taste.
  • 2 tbsp butter For sautéing the garlic and shrimp.
  • 2 tbsp olive oil You can add more to the pasta if desired.
  • 1 cup fresh spinach leaves Stir until wilted.
  • 2 juices lemons Juice for brightening the flavor.
  • Salt and pepper to taste Salt and pepper Season as needed.
For the pasta
  • 16 ounces angel hair pasta Cook according to package instructions.
  • ½ cup grated parmesan cheese Substitute with any hard cheese if needed.

Method
 

Cooking the Pasta
  1. Start by cooking the angel hair pasta according to the package instructions in a pot of salted boiling water. Once ready, drain and set aside.
Making the Garlic Butter Shrimp
  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the shrimp and season with salt and pepper. Cook for 3-4 minutes, until the shrimp turn pink and opaque.
  4. Add the lemon juice and spinach to the skillet, stirring until the spinach wilts.
Combining Pasta and Shrimp
  1. Toss the cooked pasta into the skillet with the shrimp mixture.
  2. Stir in the grated parmesan cheese, adding more salt and pepper to taste.

Notes

Serve immediately, garnished with additional grated parmesan and a wedge of lemon on the side. Pairs well with a light salad or crusty bread. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
