Preparation
- Preheat your oven to 200°C (fan oven).
- In a bowl, mix together the cottage cheese, eggs, melted butter, and honey until well combined.
- In a separate bowl, combine the flour, baking powder, vanilla sugar, and salt. Gradually fold this mixture into the cottage cheese blend. The dough should be thick and slightly sticky.
- Fold in the chopped dark chocolate.
- Sprinkle some flour on a clean surface and transfer the dough onto it. Lightly press the dough into a square about 2 cm thick.
- Cut the square into 9 scones.
- Place the scones on a baking tray lined with parchment paper.
- Bake for about 15 minutes or until they are golden brown.
- Let them cool on a wire rack, then serve and enjoy!
Notes
Serve the scones warm, with butter or jam. Store leftovers in an airtight container for up to 2 days or freeze for up to a month. Gentle mixing preserves texture.
