  1. In a large bowl, combine Seneca White Corn, rolled oats, and any optional ingredients like chocolate chips or shredded coconut.
  2. In another bowl, mix together peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the peanut butter mixture over the dry ingredients and stir until everything is well combined.
  4. Using your hands, form the mixture into small balls (about 1 inch in diameter).
  5. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to set.

Notes

Store the energy balls in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months. Thaw before enjoying. Options to add extra crunch include chopped nuts or seeds; adjust sweetness with more or less honey. For variations, consider different nut butters or add dried fruits.
