- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
- Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread evenly on the sheet pan.
- Roast sweet potatoes for 15 minutes until just starting to soften.
- Slice sausage into 1-inch rounds. Add to the pan with remaining olive oil. Toss with sweet potatoes.
- Continue roasting for 15–20 minutes until sausage is browned and potatoes are tender.
- In a small pan over medium heat, whisk together honey, soy sauce, broth, and minced garlic. Simmer for 2–3 minutes until slightly thickened.
- Drizzle sauce over roasted sausage and sweet potatoes. Toss gently to coat everything evenly.
- Garnish with chopped parsley and serve hot straight from the pan.
Notes
Pre-roast sweet potatoes for even cooking. Don’t overcrowd the pan — space helps things crisp up. Add the honey garlic sauce after baking to keep it glossy and flavorful. Great for meal prep or quick weeknight dinners.
