Ingredients
  

  • 4–5 beef sausage links (about 12 oz / 340 g)
  • 2 medium sweet potatoes, diced into 1-inch cubes
  • 2 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 3 tbsp honey (or maple syrup)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp chicken or vegetable broth
  • salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread evenly on the sheet pan.
  3. Roast sweet potatoes for 15 minutes until just starting to soften.
  4. Slice sausage into 1-inch rounds. Add to the pan with remaining olive oil. Toss with sweet potatoes.
  5. Continue roasting for 15–20 minutes until sausage is browned and potatoes are tender.
  6. In a small pan over medium heat, whisk together honey, soy sauce, broth, and minced garlic. Simmer for 2–3 minutes until slightly thickened.
  7. Drizzle sauce over roasted sausage and sweet potatoes. Toss gently to coat everything evenly.
  8. Garnish with chopped parsley and serve hot straight from the pan.

Notes

Pre-roast sweet potatoes for even cooking. Don’t overcrowd the pan — space helps things crisp up. Add the honey garlic sauce after baking to keep it glossy and flavorful. Great for meal prep or quick weeknight dinners.
