Preparation
- Preheat your oven to 375 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray.
- Lay the salmon fillets skin side down on the sheet, surrounded by the chopped vegetables.
Making the Marinade
- In a small bowl, whisk together the Thai sweet chili sauce, soy sauce, ginger, lime juice, and red pepper flakes.
- Save 1/4 cup of this marinade for later, then drizzle the rest over the salmon and vegetables.
Baking
- Cover the pan with foil and bake for 15 minutes.
- After 15 minutes, remove the foil and turn on the broiler.
- Broil for another 5-7 minutes until the top of the salmon starts to blacken, keeping a close watch to prevent burning.
Finishing Touches
- Take the salmon out of the oven and brush the reserved marinade on top.
- Garnish with fresh cilantro and lime slices before serving.
Notes
Cut the vegetables to similar sizes for even cooking. Feel free to mix in other vegetables for added variety. For a spicier kick, increase the amount of red pepper flakes in the glaze.
