  • 4 pieces salmon fillets
  • 1 cup snow peas
  • 1 piece chopped red bell pepper
  • 1 piece chopped green bell pepper
  • 1 piece chopped yellow pepper
  • 1 piece chopped onion
  • 2 pieces thinly sliced carrots
For the Marinade
  • 1/2 cup Thai sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes
Garnish
  • Chopped cilantro For garnish
  • Lime slices For garnish

Method
 

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray.
  2. Lay the salmon fillets skin side down on the sheet, surrounded by the chopped vegetables.
Making the Marinade
  1. In a small bowl, whisk together the Thai sweet chili sauce, soy sauce, ginger, lime juice, and red pepper flakes.
  2. Save 1/4 cup of this marinade for later, then drizzle the rest over the salmon and vegetables.
Baking
  1. Cover the pan with foil and bake for 15 minutes.
  2. After 15 minutes, remove the foil and turn on the broiler.
  3. Broil for another 5-7 minutes until the top of the salmon starts to blacken, keeping a close watch to prevent burning.
Finishing Touches
  1. Take the salmon out of the oven and brush the reserved marinade on top.
  2. Garnish with fresh cilantro and lime slices before serving.

Notes

Cut the vegetables to similar sizes for even cooking. Feel free to mix in other vegetables for added variety. For a spicier kick, increase the amount of red pepper flakes in the glaze.
