  • 1 pound shrimp, peeled and deveined Use fresh, high-quality shrimp for best flavor.
  • 1/2 cup fresh lime juice
Fruits and Vegetables
  • 1 peach, diced
  • 1 jalapeno, seeded and finely chopped Adjust amount for desired spiciness.
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped Garnish with extra cilantro for serving.

Method
 

Preparation
  1. In a large bowl, combine the shrimp and lime juice. Let it marinate in the refrigerator for about 30 minutes or until the shrimp is opaque.
  2. Add the diced peach, jalapeno, red onion, and cilantro to the shrimp mixture.
  3. Season with salt and pepper to taste.
