Shrimp Fajita Quesadillas

Crispy tortillas filled with juicy shrimp, sautéed peppers, onions, and melted cheese make these shrimp fajita quesadillas a quick seafood dinner that is easy to love.

Ingredients
  

Filling:
  • 1 lb shrimp peeled and deveined
  • 1 tbsp fajita seasoning
  • 1 bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 2 tbsp butter or oil
Quesadillas:
  • 4 large flour tortillas
  • 1 to 1½ cups shredded cheddar or Mexican blend cheese

Method
 

  1. Toss the shrimp with fajita seasoning until evenly coated.
  2. Heat butter or oil in a skillet over medium heat. Add the bell pepper and onion, and sauté until tender and lightly browned.
  3. Add the garlic and shrimp to the skillet. Cook 2 to 3 minutes, until the shrimp are pink and cooked through.
  4. Place a tortilla in a clean pan. Layer cheese, the shrimp fajita mixture, and more cheese. Top with another tortilla or fold it over.
  5. Cook 2 to 3 minutes per side, until golden brown and the cheese is fully melted.
  6. Cut into wedges and serve hot with lime wedges, sour cream, or salsa.
