  • Optional: shredded coconut for rolling For extra texture

Preparation
  1. In a food processor, combine the pitted dates, walnuts (or almonds), cocoa powder, vanilla extract, and salt.
  2. Blend until the mixture is well combined and sticks together.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. If desired, roll the balls in shredded coconut.
  5. Place them in the refrigerator for about 30 minutes to set before serving.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Thaw in the fridge before serving. Make sure the dates are fresh and sticky for easy blending; if dry, soak them in warm water for 10 minutes before using. Adjust sweetness by adding more or fewer dates.
