Preparation
  1. In a small bowl, mix together honey, Dijon mustard, soy sauce, and minced garlic.
  2. Place the chicken breasts in the slow cooker and season with salt and pepper.
  3. Pour the honey mustard mixture over the chicken, ensuring it's well coated.
Cooking
  1. Cover and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  2. Once cooked, you can shred the chicken with two forks and mix it in the sauce before serving.
