Ingredients
  

Main Ingredients
  • 3-4 lbs beef chuck roast Choose a well-marbled cut for best tenderness.
  • 4 medium carrots, cut into chunks
  • 3 medium potatoes, cut into cubes You can use a variety of potatoes.
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 2 cups water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil Optional for browning.

Method
 

Preparation
  1. Season the beef chuck roast with salt and pepper on all sides.
  2. In a skillet, heat olive oil over medium-high heat. Sear the roast for about 3-4 minutes on each side until browned (optional).
  3. Place the carrots, potatoes, onion, and garlic at the bottom of the slow cooker.
  4. Place the roast on top of the vegetables.
  5. In a bowl, mix the water, Worcestershire sauce, thyme, and pour it over the roast.
Cooking
  1. Cover and cook on low for 8 hours or high for 4-5 hours, until the meat is tender.
Serving
  1. Remove the roast and veggies from the pot. Let the meat rest for a few minutes before slicing.
  2. Slice the beef against the grain for the best texture and serve with vegetables and cooking liquid.

Notes

For extra flavor, marinate the beef in seasonings overnight before cooking. Use fresh herbs if available for a brighter taste. Adjust vegetables for personal preference.
