Preparation
  1. Peel and dice the potatoes into small cubes.
  2. Slice the smoked sausage into bite-sized pieces.
Cooking
  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the onions and sauté until translucent, then add the potatoes.
  3. Cook the potatoes for about 10 minutes, stirring occasionally.
  4. Add the sausage and any additional ingredients like bell peppers or garlic, and continue to cook until the potatoes are golden brown and tender.
  5. Season with salt and pepper to taste.
