Ingredients
  

For the Chicken
  • 0.75 lb boneless, skinless chicken breasts Diced
  • ¼ cup lime juice For marinating
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil For marinating
  • 1 Tbsp chipotle pepper in adobo For marinating
For the Wrap
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper Chopped
  • ½ red onion sliced
  • 3 cloves garlic Minced
  • 1 tsp olive oil For sautéing
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • cup sour cream
  • Tbsp honey
  • ½-1 Tbsp chipotle peppers in adobo To taste
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro Chopped
  • 1-2 Tbsp water To adjust sauce consistency
  • ¼ tsp salt

Method
 

Preparation
  1. Marinate the diced chicken in lime juice, olive oil, seasonings, and chipotle for at least 15 minutes.
  2. Cook rice according to package instructions.
Cooking
  1. Sauté marinated chicken in a skillet over medium heat until cooked through, about 12–15 minutes.
  2. In the same skillet, sauté chopped peppers and onions until they are tender. Then, add minced garlic and the cooked chicken back to warm through.
Assembly
  1. Assemble the wraps by layering rice, the chicken mixture, beans, corn, cheese, and the sauce on each tortilla.
  2. Roll tightly like a burrito and serve immediately.

Notes

These wraps are best enjoyed fresh, but you can also serve them alongside a simple salad or some tortilla chips for extra crunch. Squeeze a little extra lime on top just before taking a bite for a burst of flavor. They also make great party food; you can cut them into smaller pieces for easy sharing. Store leftovers in an airtight container in the fridge for up to 2 days, and keep the filling and tortillas separate to maintain freshness.
