Ingredients
  

  • 1 lb cooked shrimp, peeled and chopped
  • 2 avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 to 2 limes, juiced
  • 1/2 cup tomato juice or light cocktail sauce
  • Hot sauce, to taste
  • Salt and black pepper, to taste

Method
 

  1. In a bowl, mix the shrimp with the red onion, cilantro, lime juice, tomato juice or cocktail sauce, hot sauce, salt, and black pepper.
  2. Taste and adjust with more lime juice, hot sauce, salt, or black pepper as needed.
  3. Gently fold in the diced avocado right before serving so the pieces stay intact.
  4. Spoon the shrimp and avocado mixture into small cups or glasses. Chill briefly before serving.
  5. Serve chilled.

Notes

Add the avocado just before serving so the pieces stay firm and fresh.
Use fully cooked, chilled shrimp to keep this recipe no-cook. If starting with freshly cooked shrimp, cool them completely first.
Taste and adjust the lime juice, hot sauce, salt, and black pepper before serving.
Chill only briefly because extended chilling can soften the avocado.
The shrimp mixture may be prepared a few hours ahead, but fold in the avocado just before serving.
Raw shrimp may be used only after cooking and chilling completely.
The lime juice helps slow avocado browning, but adding the avocado at the last moment gives the best appearance.
