Ingredients
  

For the Spicy Shrimp
  • 1 pound Fresh shrimp (peeled and deveined)
  • 2 tablespoons Olive oil For sautéing
  • 2 cloves Garlic, minced
  • 1 teaspoon Red pepper flakes Adjust to taste
  • Salt Salt, to taste
  • Pepper Pepper, to taste
For the Serving
  • 2 ripe Avocados Mashed with lemon juice
  • 1 cup Quinoa Cooked according to package instructions
  • 1 lemon Lemon, juiced For flavoring the avocado

Method
 

Cooking Quinoa
  1. Start by cooking quinoa according to package instructions. Once cooked, fluff it with a fork and set aside.
Cooking Shrimp
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté until fragrant.
  2. Add the shrimp to the skillet and cook until they turn pink and opaque, seasoning with salt and pepper to taste.
Preparing Avocado
  1. In a separate bowl, mash the ripe avocados with a squeeze of lemon juice and a pinch of salt.
Assembling the Dish
  1. To assemble, divide the cooked quinoa among serving plates, top with the spicy shrimp, and finish with a dollop of mashed avocado.
  2. Garnish with additional red pepper flakes and a drizzle of olive oil before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to two days. Keep shrimp and avocado separate from quinoa to avoid browning. Reheat quinoa and shrimp before serving and add fresh avocado to maintain flavor.
