  • 4 slices whole-grain bread Can substitute with sourdough for extra texture.
  • 1 tablespoon olive oil For sautéing spinach.

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the fresh spinach and sauté for 2-3 minutes until it wilts.
  3. In a bowl, beat the eggs and season with salt and pepper.
  4. Pour the eggs into the skillet with the spinach. Stir gently and cook until the eggs are set, about 4-5 minutes.
  5. Add the crumbled feta cheese and stir to combine.
  6. Toast the bread slices while the eggs cook.
  7. Once the eggs are ready, place a generous amount on each slice of toasted bread.
  8. Top with another slice of bread to complete the sandwich.

Notes

Serve warm with a side of fresh fruit or a light salad. For easy handling on the go, cut the sandwiches in half. Store leftover filling in the fridge for up to 2 days and keep the bread separate to avoid sogginess.
