- Heat the olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté for 2-3 minutes until it wilts.

- Add the crumbled feta cheese and stir to combine.
- Toast the bread slices while the eggs cook.
- Once the eggs are ready, place a generous amount on each slice of toasted bread.
- Top with another slice of bread to complete the sandwich.
Notes
Serve warm with a side of fresh fruit or a light salad. For easy handling on the go, cut the sandwiches in half. Store leftover filling in the fridge for up to 2 days and keep the bread separate to avoid sogginess.
