  • 1 cup lentils, rinsed Make sure to rinse well to remove debris.
  • 4 cups vegetable broth Use low-sodium broth for a healthier option.
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 juiced lemon Juice of 1 lemon

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in garlic and cumin, and cook for another minute.
Cooking
  1. Add lentils and vegetable broth to the pot; bring to a boil.
  2. Reduce heat, cover, and simmer for about 30-35 minutes, or until lentils are tender.
  3. Stir in chopped spinach and cook until wilted.
  4. Season with salt, pepper, and lemon juice before serving.

Notes

Serve warm with crusty bread or a fresh salad. Garnish with black pepper or olive oil for extra flavor. For creaminess, blend a portion of the soup before adding spinach.
