  • 3 large eggs, beaten Beaten well
  • 2 cups cottage cheese
  • 10 ounces frozen chopped spinach, thawed and very well drained Ensure well drained to avoid excess moisture
  • cup crumbled feta cheese
  • cup diced sweet onion
  • ¼ cup melted butter Melted for mixing
  • 2 tablespoons freshly grated Parmesan cheese
  • teaspoon black pepper
  • teaspoon garlic powder
  • A dash of nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it lightly.
Mixing Ingredients
  1. In a large bowl, mix together the beaten eggs, cottage cheese, thawed spinach, crumbled feta, diced onion, melted butter, Parmesan cheese, black pepper, garlic powder, and a dash of nutmeg until everything is well combined.
Baking
  1. Pour the mixture into the prepared baking dish. Bake in the preheated oven for about 40-45 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

  1. Let it cool slightly before cutting into squares.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat individual portions in the microwave or oven until warmed through. Ensure thoroughly draining the thawed spinach to avoid excess moisture in the casserole. Adjust seasonings based on taste.
