  • 1 lb sirloin steak Choose a good quality sirloin steak for the best flavor
  • 1 cup rice Prepare according to package instructions
  • 1 bell pepper Chopped into bite-sized pieces
  • 1 bunch asparagus Chopped into bite-sized pieces
  • 2 tablespoons olive oil Divided into two parts for cooking and seasoning
  • to taste salt Adjust based on your preference
  • to taste pepper Adjust based on your preference
  • optional garlic powder Optional seasoning
  • optional onion powder Optional seasoning

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the sirloin steak with salt, pepper, garlic powder, and onion powder.
  3. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the steak for 3-4 minutes on each side until browned.
  4. Transfer the steak to the oven and roast for an additional 10-15 minutes until cooked to your desired doneness.
  5. While the steak is cooking, prepare the rice according to the package instructions.
  6. Chop the bell pepper and asparagus into bite-sized pieces.
  7. In another bowl, toss the chopped vegetables with the remaining olive oil, salt, and pepper.
  8. Spread the vegetables on a baking sheet and roast in the oven for about 15 minutes or until tender.
  9. Once the steak is done, let it rest for a few minutes before slicing.
  10. Assemble your meal prep containers by placing a portion of rice, topped with sliced steak and roasted veggies.
  11. Store assembled meal prep containers in the refrigerator for up to 5 days.

Notes

You can heat the meal prep portions in the microwave for a minute or two. Enjoy with a splash of soy sauce or a squeeze of lemon. For longer storage, consider freezing portions, but be mindful that the texture of the steak might change.
